Wine & Spirit Education Courses

The Wine Mill now has approved status as a centre of learning for 'The Wine & Spirit Education Trust', which enables us to offer courses in wine which are open to all, whether or not they are employed in the drinks industry. If you have a member of staff, a team of waiters, or you just have a personal interest in knowing more about the world of wine, this is an opportunity to achieve quality assured qualifications that help people to know more about alcoholic beverages and to develop their tasting skills.

Course Dates for 2007 are as follows:

Foundation Course (Level 1)

Tuesdays: January 16th, 23rd and 30th. February 6th Exam.

Mondays: June 4th, 11th, 18th and 25th (Exam)

* All sessions must be attended on this course



Intermediate Course (Level 2)

Mondays: September 3rd,10th, 17th, 24th, October 1st, 8th, 15th, 22nd, 29th, November 5th Exam.

The WSET Course Prospectus

The WSET Level 1 Foundation Course in Wine

: Learn to describe the main styles of wine available, and have a basic understanding of there determining factors.
: Learn in general terms the characteristics of the world's principal grape varieties.
: Discover the correct service temperatures, equipment and glassware for the service of wine.
: Have an understanding of the main health, safety, and legal considerations when serving wine.
: Use the Level 1 WSET Systematic Approach to Tasting, to produce simple tasting records
: Understand why certain wine styles complement particular types of food.

The course takes the form of 3 two-hour interactive weekly sessions, culminating in a 45-minute multiple-choice exam on the 4th week. You will also have built up a portfolio of tasting notes, as well as being required to complete a food and wine-matching task.

The total cost of the course including all samples tasted, workbook, and examination fee is £150.00 inc.vat

The WSET® Level 2 Intermediate Certificate in Wines, Spirits and other Alcoholic Beverages

Following on from the WSET Level 1 Certificate Course, Level 2 is designed to build on the foundation of knowledge that you have acquired by taking a more in depth look into wine regions and styles, as well as examining the trends and developments of today’s drinking habits.

: We look at the nature of wine, taking a global view on production and consumption
: Hone your tasting skills helping you to make valued judgements

: Study the major vine growing regions of France, the grape varieties and styles of wine produced

: Examine the major regions of production and varieties grown in Italy, Spain and Portugal

: Take an overview of the rest of Europe’s viticultural regions and begin study of the most important ‘New World’ countries

: Learn about the 5 methods of sparkling wine production and how liqueur wines are made by examining Port, Madeira, Sherry & others

: Study of associated beverages including Beer, Brandy, Gin, Vodka and Whisky

The course takes the form of 9 two-hour interactive weekly sessions, culminating in a 60 minute multiple choice exam on the 10th week. You will also have built up a portfolio of tasting notes from over 40 samples tasted on this course.

The WSET® Level 3 Advanced Certificate in Wines and Spirits
Core Knowledge & Key Tasting Technique

This core qualification gives comprehensive coverage in wines and spirits, with an increased focus on tasting technique and the application of knowledge gained. This qualification is accredited at Level 3 in the UK National Qualifications Framework, and is a pre-requisite for candidates planning to study for the WSET Level 4 Diploma.

It is aimed at people employed in the drinks and hospitality industries in a supervisory capacity, who need core information to advise management and customers with authority and make informed selections of wine and spirits.
This is also a course for wine connoisseurs who want to learn about wines and spirits in a rigorous and structured manner to gain an internationally recognised qualification.

The course takes the form of 16 two-hour interactive weekly sessions, culminating with a two unit exam with part 1 consisting of a 60 question multiple-choice paper and a question paper requiring short written answers, and part 2 an internally set and assessed blind tasting of one wine. Both parts must be passed to gain the qualification. Over 80 samples are tasted as part of this course.
